The Palakkad cuisine has been subdivided into different sections -


'KOOTTAANS'
- gravy to be mixed with rice to be eaten as the first course.



'RASAM' - to be mixed with rice and eaten as the second course.


SIDE-DISHES - includes 'THORAN' ('PODUTHUVAL')/ 'MEZHUKKUVARATTI' (ROAST) / 'KOOTTU' / 'THOGIAL' / 'PACHADI'.
