This is a tasty and healthy salad - it goes well with molagoottals, molagooshiam and erissery.
Ingredients
3 carrots (grated) - approximately 2 cups
Lemon juice – 1 tbsp ( or of 1 small lemon)
Salt to taste
Finely chopped coriander leaves – 2 tbsp
1 green chilli – chopped
Oil – 1 tsp
Mustard seeds – 1 tsp
Asafetida – a pinch
Method -
Grate the carrots.
Add lemon juice and salt.
Heat oil, add the mustard seeds. When they crackle, add a pinch of asafetida and the chopped green chillies and add it to the carrot.
Mix well.
Garnish with chopped coriander.
