GREEN TOMATO THOKKU

'Thokku' is usually made from raw mango. 'Thokku' can also be prepared from green tomatoes - it tastes great with curd rice or dosa. It can be eaten as soon as it is prepared and has a shelf life of a week - if refrigerated.

Ingredients –
Green tomato – 500 gms – washed and chopped
Tamarind – a small piece
Turmeric powder – ¼ tsp
Salt to raste
Red chilli powder – 3-4 tsp
Oil – 3 -4 tbsp
Mustard seeds – 1 tsp
Asafetida – nearly ½ tsp

Method –
Wash and chop the green tomatoes.
Heat 3 tbsp of oil. Add the mustard seeds. When they crackle, add asafetida.
Add the chopped tomatoes and tamarind piece and stir well. Add turmeric powder and salt and stir.
Cook covered on low heat for about 5 minutes.
Stir and cook without lid, stirring in between till tomato gets cooked and water has almost evaporated. Add chilli powder and keep stirring for a couple of minutes more till oil separates.
Cool and store in a clean dry bottle in the fridge. It will last for a week.
